四神湯是溫和的藥膳,具有健脾開胃、調肝固腎、祛濕清熱、補中益氣等功效。 在日常生活中,我們通過飲用四神湯來調養身體;引用證嚴法師所示,心靈上也需要「知足」、「感恩」、「善解」、「包容」四種「心藥」,專治「人我是非」的一帖名藥,也是平日可怡然自處的良方。
四神湯
材料:
芡實 20g
蓮子 40g
茯苓 30g
生薏米 40g
當歸片 3片12g
腰果 1把60g
新鮮山藥 250g(去皮,切塊)
急凍猴頭菇 150g(洗淨,切粒)
素麵腸 3條180g(切斜片)
珍珠米 30g
薑片 5片
杞子 適量15g
水 3500g調味料:
海鹽 1.5茶匙
香菇粉 2茶匙
做法︰
取一湯鍋加入芡實、蓮子、茯苓、生薏米、腰果、珍珠米及水,大火煮沸後轉中火續煮;
另用一平底鑊,熱鑊下少許油,加入麵腸、薑片及急凍猴頭菇,煎至略為金黃後加入做法1中;
煮約40分鐘後,加入山藥、當歸片及杞子,續煮10分鐘。最後加入海鹽及香菇粉調味,即可享用。
小貼士:
加入珍珠米作用,是令煲出的湯水顏色較雪白及增加濃稠度。
下山藥的時間,也可隨個人喜好,越早加入,口感越軟綿。
Lion's Mane Mushroom Chinese Yam Four Herbs Soup
Ingredients :
20g dried Gordon Euryale seeds
40g lotus seeds
30g fu ling
40g raw coix seeds
3 slices of Chinese angelica (12g)
60g cashew nuts
250g fresh Chinese yam (peeled and sliced)
150g frozen lion's mane mushrooms (rinsed and diced)
3 seitan rolls (180g) (sliced on an angle)
30g japonica rice
5 slices of ginger
15g goji berries
3500g waterSeasonings:
1.5 tsp sea salt
2 tsp mushroom powder
Steps :
Place the dried Gordon Euryale seeds, lotus seeds, fuling, raw coix seeds, cashew nuts, japonica rice and water in a cooking pot. Bring to the boil over high heat. Then simmer over medium heat;
Heat a frying pan and add a drizzle of oil. Fry the seitan rolls, ginger slices and frozen lion's mane mushrooms until slightly golden. Add them to the cooking pot in step 1;
After simmering for 40 minutes, add the Chinese yam, Chinese angelica slices and goji berries to the soup. Simmer for 10 more minutes. Finally, season with sea salt and mushroom powder. Ready to serve.
Tips :
Adding japonica rice gives the soup a milkier colour and creamier texture.
You may add in the Chinese yam earlier. The longer you cook it, the softer it will be.
